- Preheat your oven to 180°C (350°F). Grease a 9x13 inch baking dish with non-stick spray.
- In a medium saucepan, bring the chicken broth to a boil. Add the rice, reduce the heat to low, cover, and simmer for 15 minutes, or until the rice is cooked and the liquid is absorbed.
- Season the chicken breasts with salt and pepper on both sides. In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion and garlic. Sauté until softened and fragrant, about 3 minutes.
- Stir in the thawed peas and carrots, dried thyme, and dried parsley. Cook for another 2-3 minutes, then remove from heat.
- In a large bowl, combine the cooked rice and vegetable mixture. Spread the mixture evenly in the prepared baking dish.
