  • 1 cup frozen peas and carrots, thawed
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 2 tablespoons melted butter
  • Fresh parsley, chopped, for garnish

    1. Preheat your oven to 180°C (350°F). Grease a 9x13 inch baking dish with non-stick spray.
    2. In a medium saucepan, bring the chicken broth to a boil. Add the rice, reduce the heat to low, cover, and simmer for 15 minutes, or until the rice is cooked and the liquid is absorbed.
